Sweets, sometimes referred to as the "happy endings" of meals, add a delightful touch to the meal. Desserts such as Molido, a confection made from sweet potatoes, are more than just sweets in the Philippines. This study focuses on the acceptance level of Molido by-products. It will determine the acceptability of the three samples of Molido By-Products in terms of appearance, aroma, taste, and texture, as well as the acceptability of the Molido by-products in terms of packaging. This study was delimited to thirty (30) third-year BSHM students engaged in developing products and product innovation in one of the schools in Camarines Sur and ten (10) Faculty experts. Two research methods were employed, namely the Developmental Method and the Descriptive Method, and the study was conducted in three phases, namely the preparatory phase, experimental phase, and evaluation phase. During the evaluation phase, Likert Scale was used to conduct a level of acceptability of the Molido By- Products, while the Acceptability Score Sheet was employed to assess product acceptability. Moreover, the potato molido had the highest weighted mean of 3.42 for overall acceptability among the other sample. Pouches are popular, with 62.5% of respondents indicating a strong preference for this packing style. Based on these findings, the researchers concluded that most of the respondents preferred the potato molido due to its level of acceptability and the Pouch is the most preferred packaging. In conclusion, The researchers received a recommendation to improve the product’s appearance and aesthetics to increase its appeal and marketability. This suggestion could include changing the product’s appearance to make it more appealing to potential purchasers and boost its commercial success. As a result, the study determined that the product has a good chance of success on the market.
