Dissertation note: Undergraduate Theses (BSHM) - Hospitality Management Camarines Sur Polytechnic Colleges, 2023 Abstract: Innovating a new product with the three main ingredients, Malunggay, Kalabasa, and Ampalaya, is vital and nutritious enough for every consumer. This study aims to determine the personal profile of the respondents in terms of age and sex, the degree of acceptability of innovative recipe along aroma, appearance, flavor, and texture, and the proposed innovative recipe. Fifty (50) respondents, composed of children, teenagers, and adults, participated in the study. The developmental, experimental, and descriptive methods were used in this study. Findings revealed that the majority of the respondents are from Generation Alpha and Generation Z. The personal profile of the respondents regarding sex is that out of the 50 respondents, 20 of 40 percent are males, and 30 or 60 percents are females. The innovative recipe is Acceptable in terms of Malunggay aroma, and the golden brown appearance is Highly Acceptable. Malunggay ranks 1st in terms of flavor that is Acceptable. The indicator soft in texture, ranked first and Acceptable Overall, the degree of acceptability of the innovative recipe from Malunggay, Kalabasa, and Ampalaya along aroma, appearance, taste, and texture is Acceptable. The researchers proposed an innovative recipe based on the findings: Masaya Muffins (MAlunggay, KalabaSA, AmpalaYA). The researchers recommend that to cater the nutritious snack to different generations, MASAYA Muffins should have different variants depending on the consumer's preferences.
